Wonderland was Digital Windows annual black tie dinner, the event was heavily themed and required a menu that could sit easily alongside the event environment to create an all encompassing guest experience.
The event designers consulted with Executive Chef Erling Rugsten to create a menu that fused unique ingredients and flavours with elements of the forest mirroring the weird and wonderful woodland setting created for the event.
Following a client tasting that incorporated a blind tasting of unusual herbs, grasses and flowers, to assist in heightening the senses, the following menu was developed and served to much praise on the evening:
Pressed organic tomorillo and tomato with lemon crackle crystal and moss salad.
Confit of duck leg with roasted garlic breadcrumbs, parsnip, cream pomme puree and bean casserole.
Fruits of the forest set in Champagne jelly with basil iced water and crystalised mint leaves.
